Why 120°F is the default

Three reasons:

When 130–140°F makes sense

Dishwasher without internal booster heater

Most modern dishwashers heat water internally to 140°F+ regardless of incoming temperature. Older dishwashers (pre-2000) and some budget-tier current models do not — they rely on the water heater to supply 140°F water for effective grease removal. If your dishes come out greasy with a 120°F setpoint, your dishwasher is in this category and you should consider 130°F.

Long pipe runs from heater to fixtures

Hot water cools as it travels through pipes. In a large home where the master bath is 80+ feet from the water heater, a 120°F setpoint at the heater may deliver only 105–110°F at the tap by the time the water arrives. Either raise the setpoint, install a recirculation loop, or add a point-of-use booster at the remote fixture.

Legionella concerns in stagnant systems

Legionella bacteria can grow in hot water systems between 77°F and 113°F. A 120°F setpoint is at the upper edge of this range and is generally adequate. For homes that sit unoccupied for long periods (vacation properties, second homes), a brief weekly cycle to 140°F during inhabited periods kills any accumulated Legionella in the tank.

Multi-generation households with very different needs

When adults want hotter showers but small children share the bathroom, the right answer is a tempering valve (thermostatic mixing valve) on the main supply that mixes hot tank water with cold to deliver tap-safe temperatures while keeping the tank at 140°F for storage. About $200 installed.

Below 120°F (specifically below 113°F), Legionella bacteria multiply in the hot water tank. Legionella aerosolized through showerheads can cause Legionnaires' disease — a serious pneumonia particularly dangerous for elderly, immunocompromised, and smokers.

The 120°F threshold is the consensus minimum for safe storage. Some European countries recommend 140°F for tank storage with a thermostatic mixing valve to deliver 105°F at fixtures. This produces the safest combination but requires the mixing valve hardware.

How to adjust your setpoint

Gas tank water heater

The dial is on the gas control valve at the bottom front of the unit.
